Cherry season doesn't last long. Fresh sweet cherries close a real gap (9 in 10 Malaysian adults don't eat enough fruit daily) and bring anthocyanins and natural melatonin along with the flavour.

Ingredients

Fresh milk1/2 cup (120ml)
Chia seed2.5 tbsp
Cocoa powder1 tbsp
Monk fruit sweetener1 tsp
Coconut cream1/2 tbsp
Cherries, pitted6 pcs
Multigrain bread2 small slices (50g)
Smoked salmon1 slice
Brie cheese1 slice (12g)
Honey1/4 tsp
Egg1 whole

The method

The night before: combine milk, chia seeds, cocoa powder and sweetener in a jar. Stir, rest 10 minutes, stir again, then refrigerate overnight.

Next morning: top the chilled chia pudding with coconut cream and pitted cherries.

For the toast, layer prosciutto, brie and a pitted cherry on toasted multigrain bread. Drizzle lightly with honey.

For the soft-boiled egg, boil for 4 minutes. Slice remaining bread into strips for dipping.
