Seaweed egg drop vermicelli soup.

Not all carbs are created equal. Complex carbs digest slower and provide steadier energy. This bowl builds a balanced meal around brown rice vermicelli, with meat and egg for protein, cabbage and seaweed for fibre.

Ingredients

Brown rice vermicelli50 g (half piece)
Minced pork100 g
Garlic, cloves2
Dried anchovies1 tbsp
Light soy sauce1 tbsp
Oyster sauce1/2 tbsp
Water2 cups
Cabbage, chopped1 cup (75g)
Chinese dried seaweedhalf sheet
Egg1 whole
Extra virgin olive oil1 tsp
Fried shallot1 tbsp

The method

Heat oil in a pot, sauté minced pork over medium heat 1–2 minutes, then add garlic, anchovies and sauces, stir-frying until the meat is no longer pink.

Add 2 cups of water and bring to a boil.

Add cabbage, seaweed and vermicelli, cover and cook 5 minutes.

Once cabbage and vermicelli are cooked through, top up with water if needed, crack in the egg, stir to break the yolk, cover and cook 1–2 more minutes.

Transfer to a serving bowl, sprinkle with fried shallot oil and scallion. enJOEY!
